CITRUS CHICKEN AND BEET SALAD

Ingredients

1 large chicken breast, cooked and cubed
1 tsp. Sunset Seasoned Salt
4 - 5 cups greens (a combination of leaf lettuce, spinach and kale)
2 navel oranges, peeled and sliced
¼ cup pumpkin seeds
1/3 cup Creamy Vidalia Onion & Poppy Seed Dressing
¼ cup orange juice
¾ cup goat cheese, crumbled
2 small beets, cooked peeled and quartered

Instructions

Season chicken breast with Sunset Seasoned Salt and bake
or cook on the stove top until cooked through. Cool and cube.
Place greens on serving plate or in a bowl. Combine chicken,
oranges, pumpkin seeds, Creamy Vidalia Onion & Poppy
Seed Dressing and orange juice; mix well and top greens.
Toss to coat; add goat cheese and beets and gently
toss again.
